Indian Egg Kurma Recipe
Egg Kurma is a delicious dish made with onion tomato and thick coconut paste base and spices that gives egg kurma its unique flavor and taste. Egg kurma is popular in South Asia or Central Asia. This dish makes a fantastic side dish with biryani or any flavored rice.Ingredients
- Eggs 4
- Onion 2
- Tomato 2
- Garlic cloves 5 (small type)
- Ginger 1/2 inch piece
- Green chilly 2
- Coriander leaves 2 table spoon chopped
- Pepper powder 2 tea spoons
- Turmeric 1/4 teaspoon
- Chilly powder 1 tea spoon or as desired
- Garam masala powder 1/2 tea spoon
- Coconut grated 1/2 cup
- Curry leaves chopped
- Cashew nuts 5
- Oil-3 tsp
- Salt as per taste
Making
1.. Heat 1 tsp oil in a pan.
2. Saute the ginger, garlic, small onions, cloves, coriander seeds, green chillies, pepper ,garam masala powder, and coconut for a minute.
3. Remove and grind together to a fine paste.
4. Heat the remaining oil in the pan.
5. Fry the mustard seeds and urad dal for 30 seconds.
6. Saute the onions, tomatoes and curry leaves for 2 to 3 minutes.
7. Add the turmeric powder and salt.
8. Mix well.
9. Pour 2 cups of water and bring to a boil.
10. When it starts to thicken, add the eggs and cook for 2 minutes.
11. Garnish with coriander leaves.
12. Serve hot with rice or roti.
